We only ever use premium spirits that are just as good consumed on their own as they are in our chocolate creations. These rum chocolate truffles are no different. We use St Lucian rum, distilled just down the road from our Rabot Estate plantation where we grow some of our own cacao beans. With unmistakable Carribean roots to these chocolates, just one taste will transport you to the tropical sunshine.
I know this time of year it is all about the cookies. Nothing wrong with that, cookies are great but making truffles is really easy to do and make a great addition to your holiday platters! So when I was asked to create a recipe using Diplomatico Rum and spices from Simply Organic, I was eager to give it a try.

The combination of silky coconut milk, rich dark chocolate, gooey dates and aged rum means these truffles are the ultimate chocolate treat. They are also ideal to make in advance as you can store them in the fridge for up to two weeks.

FORM TRUFFLE BALLS: Using a scoop or a melon baller, scoop a tablespoon of the firm chocolate ganache. Then roll the ganache between your hands to form round balls. Place the formed truffles onto a sheet pan lined with parchment paper. Put the truffle balls back into the refrigerator to chill for at least 30 minutes longer.
TIP: Melting wafers. Melting wafers need to be heated slowly and stirred frequently. Stop heating when there are just a few small chunks of chocolate left in the mixture. Then stir until they melt completely.You can reheat the melting wafers if the mixture becomes too thick while dipping the truffles. Do not get any water in the melting wafers or they will seize up.
DECORATE: Transfer the remaining melted chocolate into a small ziploc bag or piping bag. Snip off the corner of the bag and drizzle melted chocolate over the tops of the set truffles. Sprinkle with gold sprinkles.
Freeze: Try freezing your rum truffles in a single layer first (on a plate or cutting board). As soon as they are solid you can transfer them to a freezer safe container or bag. Store in the freezer for up to 3 months. Use parchment or freezer paper if needed between layers to keep them from sticking together.

To make the rum truffles, start by adding the chocolate biscuits to the bowl of a food processor and blitz to a fine crumb. Next transfer the blitzed biscuit crumb into a large mixing bowl. Pour in the sweetened condensed milk and rum then use a wooden spoon to stir and combine.
The best thing about these rum balls is that they are vegan-friendly and dairy-free friendly and of course no-bake too! My sister made these truffles following this recipe, but used vegan products to make it dairy free and vegan. And they came out perfectly!

Hi DeborahI usually make the balls before refrigerating the rum balls (I let it cool at room temperature). The chocolate in the mix will harden in the fridge and make it harder to roll into balls.I also allow the rolled truffles to come to room temperature before dipping them in chocolate to prevent cracking in the chocolate shell.Hope that helps.

These truffles are based on a rum truffle recipe I used to make and eat as a child. Often we would visit Mellors, a local bakery, and pick a cake. My favourite was a rum truffle and I can remember it being the size of my fist. Of course I now know that rum truffles are a cheeky way of using up leftover cake.
This is such a simple, no-bake recipe. It can be adapted in many different ways to incorporate different themes and flavourings. I find rum flavouring works better than real rum in these truffles. The rum flavouring can be sometimes be a bit difficult to find (Silver Spoon do one) so when I spot it I buy it. 59ce067264
